Jicama (hi-ku-ma) is the crunchy and sweet low-calorie vegetable that has become my most recent obsession! I've always enjoyed jicama in salads or on a vegetable platter, but I was turned off by its appearance at the supermarket. If you can't picture it, it looks like a very dirty oversized tennis ball. Not quite furry like a tennis ball, but definitely not what I would call attractive. Because of this I had steered away from it for many years.

I am constantly perusing nutrition newsletters and journals for recent studies about nutrition and health findings. This helps keep me up to date on current nutrition thinking, especially since we all know that nutrition is a fast paced field that seems to be ever changing. I recently stumbled across a new study that really excites me. It is a research study that monitored the effects of overfeeding individuals for eight weeks. The study was conducted by an obesity researcher at Pennington Biomedical Research Center in Baton Rouge.
